VASO Rooftop Lounge

If you’re looking to up your dinner game, look no further than Columbus’ latest rooftop spot. VASO Rooftop Lounge is located at the top of the new AC Hotel in Dublin and it’s completely won me over as my new go-to. It’s modern without being pretentious, the staff is utterly delightful, and don’t even get me started on the drinks and food.

There are plenty of nooks and crannies to sit back and unwind with a cocktail and plenty of tapas. I was here once on a random Friday night and it was packed with people and energy. It’s a great place to kick off a night of shenanigans.

You can even hang out on the large, rooftop patio. It was a bit too chilly for my liking, but come spring and summer, it’s going to be amazing!

VASO DublinBut back to the evening at hand! I recently had the opportunity to sample many of the tapas and signature cocktails at VASO. The night kicked off with, quite frankly, the best sangria I’ve ever had.

It’s spiked with ginger beer and served from a Porron, a classic Spanish vessel), directly into my mouth before it was poured into a glass.

We nibbled on an endless array of goodies. First up, tabla de queso y charcutería (cheese and charcuterie board) with Ibérico and Serrano ham, chorizo, manchego, arzúa and Mahón cheese all served with grilled sourdough.

Next was crispy calamari with a wonderfully sweet and savory dipping sauce and Pollo Rostizado Flatbread (roasted chicken, quince-onion jam, Mahón cheese and pickled onions). It was all so good!

In between this course and the next we had the G&T. The gin is made especially for VASO from our favorite Watershed Distillery and the soda water is sourced from Fever-Tree. I’m not usually a fan of gin and tonics, but this was light and crisp and had the most beautiful presentation that included juniper berries and baby’s breath.

The next round of dishes included Pan con Ajo Toasted Bread (whole roasted garlic cloves and grilled Manzanilla olives).

As well as a the Chorizo al Vino Tinto (a panini with chorizo cooked in red wine, goat cheese, caramelized onion) and a delicate Sopa de Calabaza (roasted butternut squash with crispy pepitas, chili oil, and crème fraîche). This arrived with yet another beautiful presentation!

The drinks continued to flow with the The Full Montenegro, a mixture of bourbon, Montenegro, honey, and chocolate bitters. This was an aromatic way to cleanse our palettes for the next round.

See, I wasn’t kidding about the endless array! Out came Pollo Rostizado con Salsa Romesco (roasted chicken, romesco sauce, onion, piquillo peppers, garlic, roasted local squash) and the classic Patatas Bravas. We fought over all of it. Nevermind that I was already so full, but it was so good!

And in keeping with the charmingly whimsical style, we were presented with the Calimocho. I can only describe this unique drink as red wine mixed with cola. It contains Tempranillo, house-made cola syrup, and carbonation. Check out how it arrives!

Somehow, I saved room for dessert and was glad because it was hot churros dipped in a warm chocolate sauce. As if that wasn’t enough, we also encountered the best flan we ever had. I didn’t think I even liked flan, but this changed the game for me.

My only regret was that I was stuffed to the gills and couldn’t sample anything else. Fortunately, I plan on being back again and again. I’ll save you a seat on the patio come spring!
